2 Ingredient Pancakes – Simple, Quick & Healthy

With the summer holidays on approach, we thought we would take a step towards simplicity in the kitchen. Sure it is a time for festivities, dinner dates and kids running around your feet looking for something more eat, but that doesn’t mean you have to spend hours in the kitchen. This delectable recipe ticks all three of our boxes, it is SIMPLE, QUICK and HEALTHY. With only 2 ingredients and a hot pan you can create winning breakfast or snack for the whole family… add some fresh fruit and you have a summer feast.

It really is that simple.


2 Large Eggs

1 Ripe Banana

Coconut Oil or Butter as needed


  1. Heat your frying pan. Add a small amount of oil to non-stick the surface.
  2. Blend the eggs and banana in a blender until very smooth, 30 seconds to a minute.
  3. Pour the banana mixture in the hot pan and cook for 1 minute. Flip and cook another minute. Serve immediately.

We add a blend of fresh fruit to the top to make it all the more sweeter, try adding blueberries, strawberries, shredded coconut, mango or grated apple and cinnamon.

Have a few more minutes up your sleeve? Try adding LSA, chia seeds and cinnamon to the blender while it is all mixing for an extra protein punch.

Voila – breakfast is served!
