A Soup to Balance: Cabbage & Beetroot Borscht

This colourful and alkalising soup helps to balance and restore the body. Each ingredient has its own power packed healing qualities, beyond tasting good it will leave you feeling good too!

Cabbage: antioxidants & vitamin C
Beetroot: detoxifies the liver & lowers blood pressure
Caraway: antioxidant, carminative, and anti-flatulent
Apple Cider Vinegar: alkalising (balances ph levels)
Yoghurt: probiotics (balances good bacteria in the gut)

Borscht is a sour soup popular in several Eastern European countries, with many variations this is our Mana Kitchen version.

Cabbage & Beetroot Borscht

1½ C potatoes, diced

1½ C beetroots, diced

5 C stock

a little oil for sauteing

1½ C onions, chopped

1 t caraway seeds

1 stalk celery, sliced

1 carrot, diced

4 C shredded cabbage

2 t salt

1 t freshly ground pepper

2 t dill (keep 1 tsp for garnish)

3 T cider vinegar

2 T brown sugar

1 C tomato puree

4 T yoghurt for garnish (optional)

Method

In a large pan sauté the onions and caraway seeds in a little oil until soft.

Add the beetroot, potato and stock.

Bring to the boil, cover and cook over medium heat for about 20 minutes until tender.

Add the remaining ingredients, cover and cook 15 minutes.

Blend and adjust the seasonings.

Serve with a little yoghurt and fresh dill.
