Egg Crostini

Here’s a lovely simple recipe for Easter

Egg Crostini

6 hard boiled eggs – mashed
1/2 cup greek yoghurt and mayonnaise combined (ratio to taste)
1-2 cups chopped spinach
2 Tbsp spring onions or red onion finely chopped
1 ripe avocado mashed – optional
Salt and Pepper to taste

  1. Mash the hard boiled eggs.
  2. Mix together with the other ingredients and pile on slices of sourdough or other good bread, toasted.
