The Best Back to School Snacks

The Easter Holidays have come and in the tail wind of chocoloate foil wrappers we thought we would gift you this simple (and mostly healthy) recipe for baking some back to school snacks. We are talking super simple… apples, water, lemon juice, cinnamon and a sprinkle of sugar… curious? Check it out…

Fruit roll ups have long been a trend, but sadly most of these store bought treats are filled with colours and heaps of sugar. With bountiful apples on the trees we thought we would try making our own and it turns it out is pretty straight forward.

All you need is:

4 c. assorted apples (Granny Smith, Golden Delicious etc) peeled and chopped
1/3 c. water
2 tbsp. granulated sugar
1 tbsp. freshly squeezed lemon juice
1 tsp. cinnamon

Then simply:

  1. Preheat oven to 175°. Line a large, rimmed baking sheet with parchment and lightly grease with cooking spray.
  2. In a medium saucepan, add apples, water, sugar, lemon juice, and cinnamon. Bring to a boil, then reduce to simmer until apples begin to break down and liquid is mostly evaporated (this takes about 15 minutes).
  3. Pour into to a food processor and blend until very smooth. Spread evenly onto prepared baking sheet and bake until dried out and no longer sticky. Expect this to take about 3 to 4 hours – it will depend sightly on how thick the mixture is on your tray.
  4. Using scissors or a knife, cut the flat sheet into vertical strips and roll up.
Keep stored in an air tight container.

Serve as a quick and easy treat or add to the kids lunch boxes. ENJOY.
