Enjoy the fresh tastes of summer whilst using up that stale French stick to make this delicious tomato salad.
Stale bread (a few slices or 1/2 a french stick)
4 large ripe tomatoes
1 small red onion
handful basil leaves
2-3 tbsp balsamic vinegar
4 tbsp olive oil
freshly-ground black pepper
- Preheat oven to 180°C.
- Cut or break bread into cubes and bake for approximately 5 minutes until toasted golden brown all over. Allow the bread to cool while preparing the rest of the ingredients.
- Chop the tomatoes, retaining all the juice, seeds and flesh in a large bowl.
- Finely slice the onion and toss with the tomatoes. Add chopped or torn basil and parsley.
- Finally add the bread, dress with the vinegar and oil and gently toss everything to mix. (Some freshly ground pepper adds extra bite.)
