Italian Tomato Salad (Panzanella)

Enjoy the fresh tastes of summer whilst using up that stale French stick to make this delicious tomato salad.

Serves 4


Stale bread (a few slices or 1/2 a french stick)
4 large ripe tomatoes
1 small red onion
handful basil leaves
handful parsley
2-3 tbsp balsamic vinegar
4 tbsp olive oil
freshly-ground black pepper


  1. Preheat oven to 180Ā°C.
  2. Cut or break bread into cubes and bake for approximately 5 minutes until toasted golden brown all over. Allow the bread to cool while preparing the rest of the ingredients.
  3. Chop the tomatoes, retaining all the juice, seeds and flesh in a large bowl.
  4. Finely slice the onion and toss with the tomatoes. Add chopped or torn basil and parsley.
  5. Finally add the bread, dress with the vinegar and oil and gently toss everything to mix. (Some freshly ground pepper adds extra bite.)
